- 2 cups heavy cream 🥛
- 1 vanilla bean, split and scraped (or 1 tsp vanilla extract) 🍦
- 5 large egg yolks 🥚
- 1/2 cup granulated sugar 🧂

- Preheat your oven to 325°F (160°C) and prepare a baking dish with hot water for a water bath. 💧
- Heat the cream and vanilla bean in a saucepan over medium heat until it just begins to simmer. Remove from heat and let it cool slightly. 🍶
- Whisk the egg yolks and sugar in a bowl until pale and thick. Slowly pour the warm cream into the egg mixture while whisking constantly. 🥄
