- 1/2 cup chicken or vegetable broth โ to make the sauce
- 1 tbsp cornstarch โ mixed with 2 tbsp water to create a slurry
- 1/4 cup chopped green onions โ for garnish
- 1 tsp Sichuan peppercorns โ for a unique numbing spice (optional)
Instructions
1 . Prepare the Eggplant:
- Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat.
- Add the eggplant pieces and cook until theyโre golden brown and tender (about 7-10 minutes). Remove and set aside.
2. Cook the Pork:
- In the same pan, add the remaining tablespoon of vegetable oil.
- Add the ground pork and cook until browned and cooked through (about 5 minutes).
- Break up the pork into small pieces as it cooks.
3. Make the Sauce:
- Add minced garlic and ginger to the pan with the pork. Sautรฉ until fragrant.
- Stir in doubanjiang (chili bean paste), soy sauce, rice wine, and hoisin sauce.
- Pour in the chicken or vegetable broth and bring to a simmer.
4. Thicken the Sauce:
- Add the cornstarch slurry to the pan and stir until the sauce thickens.
5. Combine Everything:
- Return the cooked eggplant to the pan and toss to coat with the sauce.
- Cook for an additional 2-3 minutes, allowing the flavors to meld together.
6. Finish and Serve:
- Stir in Sichuan peppercorns if using, for an authentic numbing spice.
- Garnish with chopped green onions.
