Instructions:
- Grind the Cashews: Grind the cashews into a fine powder. Be careful not to over-grind, or they might turn into a paste. Sift to remove any large bits.
- Make the Sugar Syrup: In a non-stick pan, mix sugar and water. Stir over medium heat until the sugar dissolves. Continue cooking until the syrup reaches a single-thread consistency (a drop forms a string between your fingers).
- Add Cashew Powder: Reduce the heat and gradually add the cashew powder to the syrup, stirring constantly to avoid lumps. Add saffron strands if using. Cook until the mixture thickens and pulls away from the pan (about 5-7 minutes).
- Knead the Dough: Transfer the mixture to a greased plate. Let it cool slightly, then knead it into a smooth dough with ghee. Be careful, as it will still be hot. If it’s too sticky, add a bit more ghee.
- Roll and Cut: Place the dough between parchment paper and roll it out to about 1/4 inch thick. If using, place silver leaf on top. Cut into diamond shapes.
