For Chole (Chickpea Curry):
- 1 cup dried chickpeas (or 2 cans of cooked chickpeas) π°

- 1 teaspoon amchur powder (dried mango powder) π

For Bhature (Fried Bread):
- Oil for deep frying π°
- 2 cups all-purpose flour πΎ
- 1/2 cup plain yogurt π₯
- 1/4 cup warm water π
- 1/4 teaspoon baking soda π§
- 1/2 teaspoon sugar π¬
- 1/4 teaspoon salt π§

Preparing the Chole:
- Soak and Cook Chickpeas
- If using dried chickpeas, soak them overnight in plenty of water. Drain and rinse.
- Cook the chickpeas in a pressure cooker or large pot until tender. Set aside.
- Make the Curry Base
- Heat 2 tablespoons of oil in a large pan over medium heat.
- Add 1 teaspoon of cumin seeds and let them sizzle.
- Add the finely chopped onion and sautΓ© until golden brown.
- Add the minced garlic and minced ginger, and cook for another minute.
- Prepare the Sauce
- Stir in the pureed tomatoes and cook until the oil starts to separate.
- Add chole masala, coriander powder, turmeric powder, red chili powder, and salt. Cook for 5-7 minutes.
- Combine and Simmer
- Add the cooked chickpeas to the sauce and mix well.
- Add 1 teaspoon of amchur powder for tanginess.
- Simmer for 10-15 minutes, allowing the flavors to meld. Garnish with chopped fresh cilantro.
Preparing the Bhature:
- Remove and drain on paper towels.n if needed.
- Make the Dough
- In a large bowl, mix 2 cups of all-purpose flour, 1/2 teaspoon of salt, 1/4 teaspoon of baking soda, and 1/2 teaspoon of sugar.
- Add 1/2 cup of plain yogurt and gradually add warm water to form a soft dough. Knead until smooth and elastic.
- Let the Dough Rest
- Cover the dough with a damp cloth and let it rest for at least 1 hour.
- Shape and Fry the Bhature
- Divide the dough into small balls. Roll each ball into a circle about 6 inches in diameter.
- Heat oil in a deep pan over medium heat.
- Carefully slide one bhature into the hot oil. Fry until puffed and golden brown on both sides, pressing lightly with a slotted spoon if needed.
