1 . Caramelize the Sugar:
- Heat the vegetable oil in a large pan or Dutch oven over medium heat.
- Add the sugar and cook until it melts and turns a deep caramel color. Be careful not to burn it.
2. Brown the Pork:
- Add the pork belly pieces to the caramelized sugar and cook until they are browned on all sides.
3. Add Aromatics and Spices:
- Add minced garlic, sliced ginger, and star anise to the pan. Stir and cook for 1-2 minutes until fragrant.
4. Add Sauces and Simmer:
- Stir in soy sauce, dark soy sauce, and rice wine.
- Add enough water to cover the pork.
- Bring to a boil, then reduce the heat to low and cover. Simmer for about 1 to 1.5 hours, or until the pork is tender and the sauce is thickened. Stir occasionally and adjust the salt if needed.
