Ingredients:

- 1 cup yogurt π₯
- 2 tbsp ghee or vegetable oil π§
- 1 tsp cumin seeds π±
- 2-3 dried red chilies πΆοΈ
- 1 tsp turmeric powder π
- 1 tsp Kashmiri red chili powder πΆοΈ
- 1 tsp ground coriander πΏ
- 1 tsp garam masala πΊ
- 1 tsp fennel seeds πΎ
- Salt to taste π§
- Fresh coriander for garnish πΏ
Instructions:
- Marinate the Meat: In a bowl, mix the lamb with yogurt, turmeric powder, and a pinch of salt. Let it marinate for 30 minutes. β³
- SautΓ© the Spices: Heat ghee in a large pot. Add cumin seeds, dried red chilies, and fennel seeds. SautΓ© until aromatic. πΎπΆοΈ
- Cook the Onions: Add sliced onions and cook until golden brown. π§ Stir in garlic and ginger, cooking for another 2-3 minutes. π§π«
- Add the Spices: Mix in the ground coriander, Kashmiri chili powder, and garam masala. Cook the spices for 1-2 minutes until they release their oils. ππΏ
- Brown the Meat: Add the marinated lamb to the pot and cook until browned on all sides. π₯©
- Simmer the Curry: Add enough water to cover the meat. Bring it to a boil, then reduce the heat and let it simmer for 45 minutes to 1 hour, stirring occasionally. π°οΈ
