Ingredients:
For the Vada:
- 2 large potatoes π₯
- 1 cup besan (gram flour) πΎ
- 1-2 green chilies, finely chopped πΆοΈ
- 1 tsp mustard seeds π±
- 1 tsp turmeric powder π
- 1 tsp cumin seeds πΏ
- 1 tsp garam masala πΆοΈ
- 1/2 tsp red chili powder πΆοΈ
- 1 tbsp chopped coriander leaves πΏ
- Salt to taste π§
- Oil for frying π³
For the Pav:
- 6-8 pav buns π
- Green chutney (coriander and mint chutney) πΏ
- Tamarind chutney π―
- Finely chopped onions π§
Instructions:
1 . Prepare the Vada Filling:
- Boil and mash the potatoes. π₯
- Heat oil in a pan, add mustard seeds, cumin seeds, and green chilies. π³
- Add turmeric, garam masala, red chili powder, and salt. πΆοΈ
- Mix in the mashed potatoes and coriander leaves. Cook for a few minutes. πΏ
2 . Prepare the Batter:
- Mix besan with water, turmeric, and salt to make a smooth batter. πΎ
- Heat oil in a deep pan for frying. π³
3 . Shape and Fry:
- Shape the potato mixture into small balls. π₯
- Dip each ball into the besan batter and fry until golden brown. π³
4 . Assemble the Vada Pav:
- Slice the pav buns in half. π
- Spread green chutney and tamarind chutney on the buns. πΏπ―
- Place a vada in each bun and top with chopped onions. π§
5 . Serve Hot:
Serve your Vada Pav hot with extra chutneys or a side of fried green chilies. πΆοΈ
